Mouth-watering chocolate Oreo cheesecake cookies




This quick and easy recipe is for all the Oreo and cheesecake lovers out there. And what a combo these two are! Loaded with chopped up Oreos and a cheesecake filling, these might be our cookies of the year! The added cocoa powder perfectly pairs with the Oreos, and balances the cheesecake flavour. These cookies are sure to impress, and any occasion is the perfect occasion!

 


 

Ingredients (makes 12-14 cookies):

Cheesecake filling:


165g soft cheese (we used original Philadelphia)

40g icing sugar

1tsp vanilla extract


Cookie Dough:


110g softened butter

160g brown sugar

50g granulated sugar

1 egg

1 tsp vanilla extract

1-2 tsp red food colouring (if you fancy turning these into Red Velvet cookies)

3/4 tsp salt

1/2 tsp baking powder

180g all-purpose flour

2 tbsp unsweetened cocoa powder

1/4 cup Oreo crumbs (finely chopped)

6 Oreos, roughly chopped

White chocolate chips

 


 

Method:


  1. Whisk together the soft cheese, icing sugar and vanilla extract until combined.

  2. Place 10-12 teaspoons of the cheese filling on a baking sheet or plate and freeze for at least an hour.

  3. Preheat the oven to 190C when the filling is nearly solid.

  4. Combine butter and all sugars with an electric whisk.

  5. Add the egg and vanilla extract, mix until just combined (if using food colouring, add it in now)

  6. Now add all the dry ingredients and carefully fold. This is also when you add all the chopped Oreos and white chocolate chips.

  7. Scoop 1-2 tbsp of dough and place it on a tray. Using a teaspoon, press down on the middle of the dough, creating a dwell. This is where you can now place your cheese filling. Mould the ball together, covering the filling.

  8. Bake for 15-20 min, or until edges turn crispy.

  9. Enjoy!
